Hey bakers, chefs and anyone that's made (or tasted) a great appetizer, I'm wondering if you have any good ideas for make ahead appetizers and simple, serving size desserts. Any kinds would be great, I've also been looking for some kind of dessert (preferably with chocolate...mmm) to do with fresh raspberries since they're on sale this week.
Any ideas? Recipes?

A fun dessert to make with the girls, is chocolate bowls. You melt chocolate peices, dip in a blown up water balloon, and let the chocolate harden. Then remove the balloon and you have a chocolate bowl. Fill with ice cream and berries, then eat the bowl. I could help, if those instructions didn't make any sense :-) It's really easy.
I like sweet and sour, or bbq meatballs for appetizers. Make the meatballs ahead and freeze them, or make them fresh. Put them in the slow cooker with your favorite sauce, and then present them with a toothpick in each.
ooo, i had the most delicious chocolate cheesecake with raspberry sauce on it once. i don't know the recipe, but i bet you could find something yummy online.
one of my favorite appetizers is a spinach and artichoke dip. you dip those stacey's pita chips in it or cut up baguette bread. yum.
1/2 c shredded mozzarella
1/2 c sour cream
1/2 c mayo
1/2 c grated parmesan cheese
2 tsp dijon mustard
1 14oz can artichoke hearts (drained & chopped)
1 c spinach leaves coarsely chopped
1/2 c red onion chopped
mix it all together except for 1/4 c of parmesan and spread in 9-inch pie dish. sprinkle w/ remaining permesan. bake uncovered at 350 for 15 min. so easy. and delicious. and fatty. :)
I second the spinach artichoke dip. Whenever we have to do appetizers we do that dip and a bruschetta...Just thinly slice a baguette, brush with a little olive oil and toast it under the broiler. Then have various toppings. You can put the toppings on yourself or have it like a do-it-yourself bar. Our favorites are sundried tomatoes and fresh basil (just rough chop it all together with some salt and pepper), a chesse version with brie or spice ricotta mixed with parmesan, or an artichoke mixed with a little spinach and fresh herbs.
For raspberries -- I love cobbler or mousse (dark chocolate or white chocolate) You can serve them in the chocolate cups or in little muffin cups.

Thanks for the ideas! I should really make that spinach dip, I usually love it, but sometimes the spinach just tastes too spinach-y. But other times I mostly just taste the heavenly cream and cheese!
Angie, I went with your idea but made choc cups with mini muffin papers because I didn't want to blow up lots of balloons--I'll post a pic. THank you!
