Green Peanut Butter Stir Fry

Here is a picture of a dinner I made last week. It's based of a peanut butter stir fry recipe of Josh's. He cooked this for me on one of our first dates and 6 months later we were married--need I say more? It's my favorite dish in this home. Well, I modified it to get the girls their veggies and added a few things.
I just through in the blender spinach, cauliflour, broccoli, a ton of green pepper slices and the rest of the sauce ingredients. I left some big chunks of veggies so I wasn't eating straight baby food. It was still really good with the extra veggie sauce! I also ran out of rice, so I found some grain stuff in our pantry and cooked that.
All dinner I couldn't figure out what it was, but it worked and the next day I realized it was wheat. I think? Obviously I don't cook with wheat much, I just use it for blender pancakes and I swear the wheat looked different.
It looks really unappetizing, I know, and that's why by the third day of leftovers the girls pursed their lips shut when I tried to feed them. Day 1 there were no problems with them eating it though!

I had to laugh when I saw the bottom picture next to the picture of the kitchen wall because it kinda matches.

Ha! It does! Lots of green going on. Well, not any more, kind of boring now. Arlynda, I'm glad you like my color!
