Pretty Eggs


We try to cook with egg whites a lot. Here are the remains. I happened to find this quite pretty and thought I'd share.

I like to do one yolk and 2 whites when I do scrambled eggs for me. My boys need the calories so I usually do straight eggs for them. Actually, Nathan MAYBE eats one egg and Marshall RARELY eats much at all. Ever. I mean it. It's getting old. I'm sick of it. Feeding disorders suck. Today he ate 1 TINY bite of a scrambled egg, 1/2 slice of wheat toast for breakfast, nothing for lunch, but one slice of pizza for dinner...HOORAY!!! ONE MEAL!!! I'm so thrilled.
I bet you posted your egg post just so you could hear me rant, didn't you?

I don't think I will ever fully understand why people don't eat the yokes.
You're right, though. It is a pretty picture.

The yolks are high in cholesterol. Afton, just today I trashed 7 yolks! :) I do like the contrast.

Since babies aren't supposed to have whites, it works out nicely sometimes when we take the time to cook up the leftover yokes. I tasted them once as "scrambled yokes" and they were terrible though.

And Arilyn, that stinks that feeding time is so stressful! I can relate there on some level. Hazel was sooooo picky for such a long time that every eating time became stressful, which obviously wasn't good. I don't know what happened, but it's been getting better thank goodness!

Was Hazel two when she did that? I remember when Nathan went through that stage and you wondered how the heck they keep any fat on them at all!!

Marshall is 4 and there is no end in sight to his feeding disorder. Thankfully I got an appt next week with the feeding therapist. I'm desperate for some help here. We don't have a diagnosis but we're sure there is something wrong. He takes an anti-psychotic drug and when he's on it, he gets less angry (still gets REALLY angry a lot and hurts us but not as bad). Bi-Polar maybe...or mild Autism. Something though...

Oh and he doesn't sleep well either. Sometimes he sleeps through the night and it's heavenly!
