Easy Delicious Dinner Recipe

I'm a little embarrassed to say, but we've made the same meal three times this week. Granted we had company each time and we wanted something we knew would be good and easy, but still, that seems like a lot. But it's sooo good. So good that I have to share with you. I wish I'd taken a picture, it's pretty. But I'll probably make it again soon, so I can take it then:).

RECIPE:

Marinate chicken breasts in a balsamic dressing (Josh added some garlic, onion powder and salt this time I think). Cut up some red peppers into quarters, toss in bag with salt, pepper, garlic, onion powder, olive oil. Grill chicken and peppers. Serve chicken with a slice of fresh mozzarella, basil leaf, tomato all stacked. Drizzle with balsamic vinegar, serve.

We made a side dish of spaghetti noodles with a light sauce made from sauteeing some onions, fresh or dried, in olive oil, putting in a can of crushed or diced tomatoes, garlic powder. We liked the sauce sparse so it was just a light addition that didn't over power the chicken. Serve with a salad, either "Italian-y" with romaine and Olive Garden type toppings or spinach with craisins, nuts, sweet dressing and mozzarella, swiss or parmesean cheese.

I liked putting the chicken, pasta and peppers all together and cut up so I could enjoy all the flavors together. Yummm.

Ha! Eric was wondering what you put on those red peppers to make them so yummy. Now we know. :)

mmmmm.... i still haven't gotten over that yummy spinach-mandarin orange-poppy seed dressing salad you made me fall in love with at the shanty...way to keep up the goodness
