Blueberry Challenge

I tend to be pretty regular with my meals (how ironic my body isn't as much of a follower). I think I slip into habits with eating because I find a generally healthy, and usually easy, way to do things. I go in phases with my meals. When Josh and I dated, we had wraps all the time: lunch meat, sprouts, lettuce, a little salad dressing, and I don't know what else, but they were full.

This past year, I've been on a spinach kick. While I was dieting but also nursing and running, I was so hungry so I ate a bag--yes, a full 12 oz bag of spinach almost everyday for lunch with minimal toppings. I've cut down to a little more than half a bag now and allow myself a few more toppings:).

I used to have a small bowl of fiber one every morning with a tiny bit of Kashi crunch tossed in for some sweetness, but then the blueberries came.
My friend Kat organized this big ol fruit order that I think most people ended up splitting with other people because it came in bulk. We love blueberries, so we bought the 30 pounds of frozen blueberries and kept all of it (and just over $70). Life was good, I'd toss some into my morning bowl of FiberOne instead of the Kashi and enjoy having a little blueberry in almost every bite.
And then we decided we're moving. And now this is how I eat breakfast--and I'm LOVING it! I just dump, dump, dump them in. We've been going at them like this since we found out and trying to eat them all before we move has been the funnest challenge we've probably ever taken on.

I wanted to show the way the blueberries slowly make my cereal into a slushy since there are so many, ahh, it's so wonderful! The girls used to get them every day for breakfast too, but that really messed with their diapers, so we have to limit their intake:). But they love them.


Since we only have a month left and lots of blueberries, I'm wondering if any of you have good ideas for frozen blueberries. We've done crepes, muffins, and of course, cereal, but that's it.

I really wish we had a HUGE stash of blueberries like you do! My plan is to pick a TON this summer, along with every other kind of berry, so we can eat them all year long. We love blueberries in smoothies, oatmeal and on top of pancakes. (crepes sound yummy!) And Katie told me she even made some granola bars recently - I bet you could find a recipe online and add some berries to those.

Berry Smoothies: lots of berries, a ripe banana, apple juice, a dash of cinnamon and just a little vanilla extract . . . some ice if you need it thicker.

You can also mix them into the pancake batter and then they cook into the pancakes all nice and warm!

I'll see what else I think of. What a fun challenge :)

ps, reading your post made me laugh. i've eaten kashi cereal, and it tastes like cardboard to me, so when you said you added it to your fiber cereal to add sweetness, i about died. that's like adding cardboard to styrofoam to me!! but now i know how you keep such a lovely, lithe figure. :)

We had blueberry pancakes for breakfast just this morning!

We made tons of blueberry jam this summer--that's a moveable way to use up the berries (assuming no jars break en route).

I also really like them with steel-cut oats--they give the oats the perfect amount of sweetness.

We like whole wheat blueberry pancakes, blueberry crisp or blueberry pie, blueberry smoothies, blueberries on ice cream, blueberry yogurt parfaits, jam (though cooked jam isn't as good as freezer jam in my opinion), blueberry syurp, and that's all I can think of now. Good luck! I'll buy some from you if you want :)

If you don't meet your challenge, I'll buy them from you - my kids love blueberries and they would definitely spice up our oatmeal.

I get in eating ruts too. And, fortunately, Clarke isn't picky, so he doesn't mind eating the same thing over and over again.
