Seinfeld's Banana Bread


I love Jerry Seinfeld's wife's cookbook. Don't remember her name, but I love the book. My favorite recipe is for her banana bread. I only slightly alter it--a little bit more banana, a little less oil, add some flax seed and a healthy (okay fine, unhealthy) dose of chocolate chips.

It's so good in fact that despite my new diet "intentions" (not quite goals because then I'd have to stick to them:), I just ate a muffin from the delicious batch. Then I remembered there was a cup of cauliflour in the whole thing and I really needed to get some more vegetables in, so I had three more.

Hmm, I definitely need that cookbook! Katie has it as well and makes cookies with chickpeas - who would've thought?? :) In alot of my baking recipes I substitute applesauce for oil and bananas for eggs - they seem to work well! That's as far as I've gotten with my healthy substitute experiments...

wait-a-minute . . . did you say cauliflower? i'm finding this hard to believe. and they taste good??? you're going to HAVE to tell me the name of that book! :) laurel

mmmmm. Bring one to Ohio!! Kidding. If it were my house, they wouldn't last more than 24 hours. And yes, there are only 3 of us. :) I love the idea behind that cookbook.
